Spinach Fritters - Palak Pakora

- 18-20 spinach leaves

- 2 cup besan / gram flour
- 2 tsp red chili powder
- 2 tsp coriander powder
- ¼ tsp carom seeds / ajwain
- 2 tsp while sesame seeds / til
- Pinch of turmeric
- Pinch of asafetida
- Pinch of cooking soda
- 1 tsp lemon juice
- Salt according to taste ( approx. 1 tsp )
- ¾ cup water or according to need
- Combine all ingredients of batter in pan and make a thick smooth batter.
- Wash spinach leaves. Gently pet them using cotton cloth.
- Heat oil till medium hot in a pan or kadai for frying.
- Dip each spinach leaf into the batter and coat it evenly.
- Place the batter coated leaf gently in the hot oil.
- You can add more spinach leaves according quantity of oil and size of kadai.
- Fry the spinach fritters – palak pakora till golden and crisp.
- Drain spinach fritters – palak pakora on paper towels to remove excess oil.
- Sprinkle chat masala on spinach fritters – palak pakora. ( optional )
- Serve the spinach fritters – palak pakora hot with green chutney, tamarind chutney or homemade tomato sauce.
