Ingredients
  • 18-20 spinach leaves
  • Oil for frying[fusion_builder_container hundred_percent="yes" overflow="visible"][fusion_builder_row][fusion_builder_column type="1_1" background_position="left top" background_color="" border_size="" border_color="" border_style="solid" spacing="yes" background_image="" background_repeat="no-repeat" padding="" margin_top="0px" margin_bottom="0px" class="" id="" animation_type="" animation_speed="0.3" animation_direction="left" hide_on_mobile="no" center_content="no" min_height="none"]For Batter
  • 2 cup besan / gram flour
  • 2 tsp red chili powder
  • 2 tsp coriander powder
  • ¼ tsp carom seeds / ajwain
  • 2 tsp while sesame seeds / til
  • Pinch of turmeric
  • Pinch of asafetida
  • Pinch of cooking soda
  • 1 tsp lemon juice
  • Salt according to taste ( approx. 1 tsp )
  • ¾ cup water or according to need
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Combine all ingredients of batter in pan and make a thick smooth batter.
  2. Wash spinach leaves. Gently pet them using cotton cloth.
  3. Heat oil till medium hot in a pan or kadai for frying.
  4. Dip each spinach leaf into the batter and coat it evenly.
  5. Place the batter coated leaf gently in the hot oil.
  6. You can add more spinach leaves according quantity of oil and size of kadai.
  7. Fry the spinach fritters – palak pakora till golden and crisp.
  8. Drain spinach fritters – palak pakora on paper towels to remove excess oil.
  9. Sprinkle chat masala on spinach fritters – palak pakora. ( optional )
  10. Serve the spinach fritters – palak pakora hot with green chutney, tamarind chutney or homemade tomato sauce.
