Phulka Roti/Chapati is a popular soft and puffed Indian thin flatbread made in every Indian household.

Ingredients
  • Whole wheat flour / Aata - 1 ½ cup
  • Water - according to need
  • Salt - 1 tsp, according to taste
  • Oil - 1 tsp
  • Dry flour for rolling
  • Ghee
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Add flour in a bowl.
  2. Add salt.
  3. Mix well.
  4. Gradually add water and knead a soft and smooth dough.
  5. Apply oil and cover the dough.
  6. Rest it at least for 30 min.
  7. After 30 min, give a quick knead.
  8. If you feel it's sticky, apply some more oil and ghee.
  9. Divide dough in a lemon size ball.
  10. Roll one ball in dry flour, flatten it.
  11. Roll out it in thin roti.
  12. Halfway sprinkle dry flour again.
  13. Heat roti tawa.
  14. When tawa is hot, place rolled roti.
  15. Cook one side. It should be less than half cooked or about one-fourth cooked.
  16. Flip the roti and cook the other side. This should be a little bit more cooked than the first side. Brown spots should be visible.
  17. Hold the roti with a tong and cook on an open flame. The roti will start to puff.
  18. Flip the roti and cook the other side on an open flame.
  19. Do not keep for more time otherwise, roti will become crispy and hard.
  20. Remove from flame quickly and apply ghee.
  21. Applying ghee will make it softer for a long time.
  22. Make a stack of roti and store in a casserole or in a roti basket.
  23. Serve the soft hot rotis with dal or a veggie dish.
Notes
If possible use chakki aata / stone ground aata.
Make a very soft dough.
You can add 1 spoon of fresh malai while kneading dough.
Give rest for at least 30 min.
Apply ghee immediately after cooking.
Stack them, cover in a kitchen napkin, and store in a casserole.
