Banana Custard for banana lovers…! Yes this is eggless one. The idea comes in mind while I see bunch of bananas in fruit basket. Eggless banana custard is easy to prepare, consumes less time and also no baking is needed.

Ingredients
  • 2 ripe medium size bananas
  • 1 ripe banana
  • 2 cup whole milk
  • 2 ½ tbsp vanilla custard powder
  • 2 tbsp sugar or according to taste
  • ¼ tsp cardamom powder
  • Banana slices and mint powder for garnishing
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Chop one banana into small pieces and keep it aside.
  2. Take ¼ cup of milk and mix custard powder with it. Mix well till it get dissolved. Make a thick paste.
  3. Meanwhile boil left 1¾ cup milk into heavy bottom based non stick pan.
  4. When milk starts to get boil, add custard powder paste.
  5. Stir continuously to avoid lumps.
  6. When mixture starts to get thick add sugar.
  7. Cook for 2 minutes and turn off the flame.
  8. Add cardamom powder and banana pieces into it.
  9. Allow it to cool completely and stir in between.
  10. Make a pure of 2 bananas.
  11. Add into prepared custard. Mix well.
  12. Refrigerate it until banana custard get set. ( optional )
  13. Garnish eggless banana custard with banana slices and mint leaves. Serve chilled / warm eggless banana custard.
