Thinking of what to do with over ripe bananas? These eggless banana muffins are excellent answer to your question. These muffins are light and fluffy; they make a super healthy breakfast with nice smoothie or as an afternoon snack with cup of tea or coffee.

Ingredients
  • 1 cup all purpose flour ( maida )
  • 3 - 4 ripe banana
  • ⅓ cup sugar
  • ¼ cup sunflower oil
  • ¼ tsp baking powder
  • ¼ tsp cooking soda
  • ¼ tsp cardamom powder
  • ¼ tsp vanilla essence
  • 2 tbsp milk ( if required )
  • Chopped nuts or chocolate chips for garnishing
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Sieve maida, baking powder, cooking soda and cardamom powder. Keep it aside.
  2. Peel the bananas. Make a puree of them.
  3. Take non stick pan. Combine banana puree and sugar. Cook until sugar get dissolved. Stir continuously.
  4. Turn of flame. Add Keep it aside. When cool down add oil and vanilla essence and mix well.
  5. Combine maida mixture and banana – sugar mixture. Mix well.
  6. If require add 1 to 2 tbsp of milk. For vegan recipe add soy milk.
  7. Line the cup cake molds with paper liner.
  8. Fill 2 – 3 tbsp of batter in each mold. Tap well. Garnish with nuts or chocolate chips.
  9. Bake eggless banana muffins on above mentioned temperature till eggless banana muffins get baked evenly.
  10. To check insert the toothpick in the center of the muffin, if come out clear then muffins is ready.
  11. Here serve fresh eggless banana muffins with tea or coffee or pack them for your kinds in lunch box.
