The Eggless Fruit Cake comes under my list of "must have" food during birthdays, Christmas and other festival celebrations. This is my own recipe and it's a family favorite.

Serves: 500 gm
  • 200 gm all purpose flour ( maida )
  • 150 gm powder sugar
  • 100 gm amul butter
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp vanilla or mix fruit essence
  • 150 ml milk
  • ½ cup roughly chopped nuts ( roasted almonds, cashews, raisins, dried black berries and candid fruits or tutti frutti)
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Baking time : 30 – 35 min
  2. Baking temperature : – Oven - Microwave Convection : 180 – 200 degree Celsius
  3. Measure all ingredients and keep aside.
  4. Grease the cake tin with butter and flour or line with Parchment paper.
  5. Roughly chop the nuts. Coat nuts and tutti frutti with maida. Remove excess maida. Keep it aside.
  6. In a bowl mix maida, cooking soda and baking powder. Mix well. Sieve properly and keep aside.
  7. Now you can preheat oven on mentioned temperature for 10 minutes.
  8. Combine butter, sugar and vanilla essence.
  9. Beat them till get white in color and fluffy.
  10. Add maida mixture step by step. Beat on slow speed. In between gradually add milk.
  11. Beat for 1 – 2 minutes. Add maida coated nuts. Mix well.
  12. Pour batter in a greased cake tin. Tap well to remove air bubbles.
  13. Transfer the cake tin into preheated oven.
  14. Bake eggless fruit cake on above mentioned temperature for 30 – 35 min or till cake get baked evenly and completely.
  15. Once eggless fruit cake will get baked, transfer the tin on wired rack.
  16. When eggless fruit cake get cooled down, unmold the cake. Allow it to cool completely.
  17. Serve fresh eggless fruit cake with tea or coffee. This eggless fruit cake is perfect lunch box recipe for kids.
