Mix Vegetable Corn Pakora

- 3 cup grated corn paste ( 1 kg corn cobs )
- 1 medium size onion ( fine chopped )
- 1 medium size capsicum ( fine chopped )
- ¼ cup grated carrot
- ½ cup tightly packed fenugreek leaves ( fine chopped )
- ¼ cup chopped coriander leaves
- 3 – 4 green chilies ( fine chopped )
- 1 ½ tsp freshly crushed black pepper powder
- 1 ½ tsp coarsely crushed coriander seeds
- 2 cup besan or gram flour
- Salt according to taste ( approx 2 tsp )
- Peel the corn cobs. Grate the corn using grater. Keep the paste aside.
- Fine chop onion, capsicum, fenugreek seeds, coriander leaves and green chilies. Grate the carrot. Keep it aside.
- Coarsely grind the black pepper corns and coriander seeds in mortar pastel.
- Now take corn paste in a deep bowl.
- Add chopped fenugreek leaves. Mix well.
- Add onion, capsicum and carrot. Mix well.
- Add chopped coriander leaves. Mix well.
- Add green chilies, spices and salt. Mix well.
- Add besan or gram flour and mix well.
- Heat the oil in the deep kadai or pan.
- Fry 10 – 12 pakora at a time on medium high flame.
- Fry till they get nice golden brown color on crust.
- Same way prepare all pakoras.
- Serve warm mix vegetable corn pakora with fresh curd, meethi chutney, onion slices, fried chilies or pickle of your choice.
While you are frying pakoras, if you will pakora absorbs more oil then you can add more besan.
