Lauki Halwa or Dudhi Halwa recipe is an Indian traditional desert made using grated bottle gourd.

Ingredients
  • 1 kg bottle gourd / lauki / dudhi ( approx. 4 cup grated bottle gourd)
  • 1 cup milk
  • ½ cup sugar
  • ¼ cup ghee
  • Dry fruits or nut for garnishing
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Wash the lauki or dudhi properly. Peel it. Grate it and keep it aside.
  2. Heat one heavy bottom based non stick pan. Add grated lauki. Cover the pan with lid and cook it for 4 – 5minutes.
  3. Meanwhile keep milk to boil on medium flame.
  4. After 4 – 5 minutes you can see lauki has released water.
  5. Now add boiling milk. Mix well. Cook it on medium flame. Keep stirring in between.
  6. Cook till 75% of liquid will get reduced. Add sugar and nuts, mix well. Cook till all liquid get almost absorbed.
  7. Finally add ghee into cooked lauki halwa.
  8. Cook the lauki halwa for a few minutes. Keep on stirring the lauki halwa.
  9. When you feel lauki halwa is in proper consistency, switch off the flame.
  10. Garnish lauki halwa with chopped nuts.
  11. Serve lauki halwa hot or you can also serve the lauki halwa cold.
Notes
Each one has their unique way to prepare lauki halwa. I also tried all the possible way of recipe to make it delicious. Believe me if once you will make lauki halwa according to this recipe, you will just fall into love with it !!
