Dal Tadka

- 1 cup split pigeon pea lentils/ toor dal / tuvar dal / arhar dal
- 3 – 3 ½ cup water
- 1 tsp salt or according to taste
- ½ tsp turmeric powder
- 1 tsp chopped ginger
- 1 – 2 fine chopped green chili
- 1 small tomato ( fine chopped ) ( optional )
- 2 tsp oil
- 2 tsp ghee
- ½ tsp cumin seeds
- 2 dry red chili
- Pinch of asafetida ( hing )
- 10 – 12 garlic cloves
- 6 – 8 curry leaves
- 1 tsp red chili powder
- Coriander leaves
- Lemon juice
- Rinse the tuvar dal properly.
- Soak it using enough water for 20 – 25 minutes. Drain the water and keep it aside.
- Meanwhile fine chop ginger, chili and tomatoes. Keep it aside.
- Make a paste of garlic in mortar pastel.
- In a pressure cooker add drained dal, 3 cup water, ginger, chili, tomato, turmeric powder and salt.
- Cook the dal in pressure cooker for 4 – 5whistle or till dal get cooked completely.
- Allow it to cool completely. Mix the boiled dal well using wooden spoon. Cook the dal on slow flame.
- At the same time heat the oil and ghee in small pan.
- Add cumin seeds when oil is medium hot.
- When cumin seeds start to crackle, add dry red chilies.
- Fry for few seconds. Add garlic paste.
- Fry garlic till raw aroma goes away. Add red chili powder and hing. Fry for 5 minutes only.
- Meanwhile keep curry leaves on top of dal.
- Immediately pour prepared tadka on curry leaves.
- Mix well. Turn off the flame. Here your dal tadka is ready to serve.
- Garnish prepared dal tadka with chopped coriander leaves. Squize lemon juice if required.
