Sev is a thin crispy fried noodle type Indian savory snack made using chickpea flour (Besan).

Ingredients
  • Readymade Besan flour - 2 cup
  • Water - ½ cup, as per need
  • Salt - according to taste
  • Turmeric powder - ¼ tsp, optional
  • Oil for frying
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. In a mixing bowl, add besan flour.
  2. Add salt and turmeric powder.
  3. Mix well.
  4. Sieve properly. Discard bigger particles, if any.
  5. Gradually add water and make a smooth dough.
  6. Not too soft, not too tight.
  7. Open the sev sancha / sev maker.
  8. Grease all the parts nicely.
  9. Heat oil in a kadhai.
  10. Do not feel more than half Kadhai.
  11. Make a thick log of dough and press it down into the sancha / sev maker.
  12. Grease and close the sev maker.
  13. By dropping a small ball, check if the oil is hot enough or not.
  14. When the oil is hot enough, drop the sev directly in oil by rotating the sev maker in a circular manner.
  15. Set flame on medium.

  17. Make 2 circles and rotate anticlockwise.
  18. Cut the sev threads.
  19. Cook sev on the consistent flame.
  20. Once cooked from one side, flip it.
  21. Cook until bubbles almost disappear.
  22. Take it out on a kitchen napkin.
  23. The same way prepares sev out of the rested dough.
