Add an extra-special touch to your meal tonight with this fast, easy and fresh spinach rice recipe of garlic spinach rice. With a little bit of fresh garlic and spinach, it’s almost healthy food.

Ingredients
  • 1 ½ cup rice
  • 1 ½ cup blanched spinach paste
  • ½ cup crushed tomato
  • ½ cup onion ( fine chopped )
  • ¼ cup carrot ( fine chopped )
  • ¼ cup capsicum ( fine chopped )
  • 1 tsp chili garlic paste
  • 1 ½ tbsp garlic ( fine chopped )
  • 1 tsp oil
  • 1 tsp ghee
  • ½ tsp cumin seeds
  • 1 tsp lemon juice
  • 2 tbsp coriander ( fine chopped )
  • Salt according taste
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Boil rice and cool it.
  2. Heat oil and ghee in non-stick pan.
  3. Add cumin seeds.
  4. When they crackle, add onion.
  5. Sauté onion till the onion turns translucent.
  6. Add garlic. Sauté it till the garlic turn light golden brown color.
  7. Add chili-ginger paste. Sauté it for 1-2 min.
  8. Add carrot and capsicum and salt. Half cook them.
  9. Add tomato puree and cook it for 2-3 min.
  10. Add spinach paste and cook it for 5 min.
  11. Add rice and gently mix it with gravy.
  12. Cook rice for 2-3 min.
  13. Garnish with chopped coriander.
  14. Serve hot with fresh curd and roasted papad.
