The corn carrot apple salad tastes so yummy !!

  • 1 cup boiled corn ( 1 corn cob )
  • ¾ cup grated carrot ( 2 small carrot )
  • 1 cup chopped apple ( 1 med apple )
  • ¼ cup fine chopped capsicum
  • ½ cup thinly shredded cabbage
  • 10 – 12 tbsp fresh curd
  • ½ tsp freshly crushed black pepper powder
  • Salt according to taste ( approx ½ - ¼ tsp )
  • 2 tbsp freshly chopped coriander
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Peel the corn cob and boil the corn cob till corn kernel get cooked. Once get cooked take out the corn from cob. You can use frozen corns also.
  2. Peel the carrot and grate the carrot and keep it aside.
  3. Same way prepare the cabbage and fine chop the capsicum. Keep it aside.
  4. Fine chop the apple. No need to remove skin of apple.
  5. Take a mixing bowl and add cabbage, carrot and capsicum.
  6. Add chopped apple and corn kernels. Mix well.
  7. Add fresh curd and mix well to prevent from oxidation of apple.
  8. Add freshly crushed pepper powder and salt. Mix well.
  9. Add freshly chopped coriander leaves. Mix well.
  10. Here your healthy and yummy corn carrot apple salad is ready for serving.
  11. Enjoy fresh or chilled corn carrot apple salad in your breakfast or meal.
I have added cabbage and capsicum for the crunch. If you do not like taste of cabbage then replace it with the same quantity of carrot. You can add vegetable of your choice.
