Sukhdi is a very popular traditional Gujarati sweet. Ragi Sukhdi is a variation of it. Traditionally Sukhdi made by whole wheat flour or atta, ghee, and jaggery.

Ingredients
  • Ragi / Nachni / Finger Millet Flour – ¾ cup (tightly packed) or 100 grms
  • Jaggery grated – ⅓ cup (tightly packed) or 100 grms
  • Ghee – ½ cup – 2 tbsp or 100 grms
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Grate the jaggery bar or finely chopped it.
  2. Measure all ingredients and keep it aside.
  3. Place an Iron Kadai. Add ghee.
  4. Add Ragi flour. Stir continuously it on slow flame.
  5. After 4 – 5 min, the mixture will start to release the aroma.
  6. At this stage turn off the flame. Remove it from the stove.
  7. Keep your eye on the timer.
  8. After 1 minute, add grated jaggery.
  9. Mix well. The mixture will start to thicken.
  10. If you find any pieces of jaggery, press them and make sure jaggery has been mixed properly.
  11. Transfer the sukhdi mixture into a greased plate.
  12. Spread evenly using the spatula.
  13. Press well by the bottom of a bowl or cup.
  14. Let it cool down for some time.
  15. Almost after 4 -5 min, cut them into desired size.
  16. Once completely cooled down, take the pieces out.
  17. Store the Ragi Sukhdi into airtight container.
