Stuffed Brinjal ( Bharela Ravaiya )

12 Green Brinjal ( Ravaiya ) 2 medium size potatoes ( medium size cubes ) 2 tbsp oil ¼ tsp mustard seeds 1 pinch asafoetida ⅛ tsp turmeric powder Salt according to taste. 2 medium tomatoes ( finely chopped / puree) 2 tbsp water 2 tbsp fine chopped coriander For Stuffing 4 tbsp gram flour ( chanano lot / besan ) 2 tbsp roasted peanuts ( coarsely grind ) 1 tbsp sesame seeds ( coarsely grind ) 1 tsp garlic paste 1 tsp red chili ½ tsp turmeric powder 1 tbsp coriander powder 1 tsp sugar ½ tsp dry mango powder Salt according to taste 1 tsp lemon juice 1 tsp oil Roast gram flour in non stick pan for a while. Turn off flame. Mix all ingredients in gram flour. Cut ¾th brinjal from both side. Stuff it with prepared stuffing. Do it same for all brinjal. Heat oil in non-stick pan. Add mustard seeds and when they splutter/crackle add cumin seeds. When cumin seeds splutter add asafoetida ( Hing ) Add turmeric powder. Add potatoes. Add salt. Add stuffed brinjal. Gently mix it. Close lid. Cook it for a sometime on slow flame. ( Approx 12-15 min ). While cooking if required add little amount of water. Add chopped tomatoes / tomato puree. Mix well. Make a bed of left over mixture of stuffing over it. ( Don’t mix ). Sprinkle water on it. Close lid. Cook it for some time. ( Approx 8-10 min ). Garnish with fine chopped coriander.
