Gujarati Lapsi is a popular classic sweet recipe. It is a traditional recipe popular across Gujarat and Rajasthan.

Ingredients
  • Water - 1 cup
  • Coarse Whole wheat flour / Bhakhri aata - 1 cup
  • Ghee - 3 - 4 tbsp
  • Jaggery - ΒΌ cup, as per taste, optional
  • Ghee for serving
  • Castor sugar for serving
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. In a pan, add wheat flour.
  2. Dry roast for 2 minutes.
  3. Remove on a plate.
  4. Add 2 tbsp of ghee and mix well.
  5. Keep it aside.
  6. In a pan, add water, 1 tbsp of ghee, and jaggery.
  7. Bring it to boil.
  8. When jaggery is dissolved and water is boiling, add roasted flour.
  9. Do not mix now.
  10. Make holes using a spatula, cover it, and cook on a slow flame for 5 - 7 minutes.
  11. Mix well and again cook on a slow flame for 7 - 8min or until done.
  12. If lapsi is sticking at bottom, place the pan on tawa and then cook on slow flame.
  13. Add ghee as per liking and add castor sugar as per taste and serve hot.
