Suvali is sweet crispy deep-fried Indian crisps. It is a Diwali special traditional recipe made in Gujarati households.

Ingredients
  • Maida / APF - 1 cup
  • Ghee - 2 tbsp
  • Milk - ¼ cup
  • Sugar - 2 tbsp
  • Cardamom powder - ¼ tsp
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. In a saucepan add milk and sugar.
  2. Cook until sugar dissolved.
  3. Add cardamom powder.
  4. Mix well.
  5. Turn off the flame and let it cool down.
  6. In a mixing bowl, add maida.
  7. Add ghee and rub well.
  8. Gradually add milk and sugar solution.
  9. Knead a semi-soft dough.
  10. Make sure do not make a very soft dough.
  11. If you left with any milk, use it in tea or any other recipe.
  12. But do not add all milk together.
  13. Knead it for 5 - 7 minutes.
  14. Cover it and keep it aside at least for 30 min.
  15. After 30 min, divide the dough into 20 - 25 equal parts.
  16. Roll each part and make a smooth ball. Flatten it and keep it aside covered.
  17. Take one part and roll it into thin puri. Pork it using a fork. Keep it aside.
  18. Same way roll out 6 - 7 suvali.
  19. Deep fry them in medium-hot oil until start browning from the edges.
  20. Flip them a couple of times and fry from both sides.
  21. Take them out on a kitchen towel.
  22. Same way roll and fry all suvalis.
  23. Once cooled down, store in an airtight container.
Notes
Always fry on medium-low flame. If you will fry on high flame, then they will start to burn from outside and they will be uncooked from inside.
