Kanda poha is the popular recipe of Maharashtra. Kanda poha is the perfect Sunday special breakfast or evening snack with tea.

Ingredients
  • Poha / Indian Flattened Rice - 2 cup
  • Onion - 1, thinly sliced or chopped
  • Green chili - 2-3, chopped, as per taste
  • Curry leaves - 1 spring
  • Peanuts - 2 tbsp
  • Cashews - 1 tbsp, broken, optional
  • Raisins - 1 -2 tsp, optional
  • Mustard seeds - ½ tsp
  • Fennel seeds - ½ - 1 tsp, optional
  • Hing - a pinch optional
  • Turmeric powder - ½ tsp
  • Sugar - 1 tbsp or more, as per taste, optional
  • Salt - 1 tsp, as per taste
  • Oil - 2 tbsp
  • Juice of one lemon or as per taste
  • Coriander leaves - ¼ cup or more, chopped
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Place poha in a sieve and wash it properly under running water.
  2. Toss well to drain out all excess water. Keep it aside for 10 mins on a wire rack.
  3. Gently toss them and separate them from each other.
  4. Add salt, turmeric powder, and sugar. Gently mix well and keep it aside.
  5. Meanwhile, finely chop the onion and green chilies.
  6. Heat the oil in a pan.
  7. Fry the peanuts until done. Take them out into a bowl and keep them aside.
  8. In the same oil, add mustard seeds.
  9. When mustard seeds start to splutter, add cashews. Add fennel seeds.
  10. Saute for 30 seconds and add hing, curry leaves, and chopped green chilies.
  11. Saute for a while and add onion.
  12. Saute until the onion turns transparent.
  13. Add poha and mix well.
  14. If poha looks dry, sprinkle 2-3 tbsp of water at this stage.
  15. Cover the pan and cook poha on slow flame for 8 - 10 min.
  16. Turn off the flame. Gently mix.
  17. Add lemon juice, coriander leaves, and fried peanuts. Mix well. Here your Kanda poha is ready to serve.
  18. Garnish Kanda poha with salted cashews, raisins, chopped onion, pomegranate seeds, sev, or chopped tomatoes.
  19. Serve warm with tea or coffee.
Notes
In place of fried peanuts, you can add roasted peanuts at the time of servings.
You can add boiled potato instead of onion or along with the onion.
You can garnish your poha with onion, tomato, grated beetroot, carrot, fresh coconut, pomegranate, raw mango, sev, farsan, or spicy boondi.
For no onion, no garlic poha recipe, use potato in place of onion.
