If you are looking for a healthy and tasty soup recipe, which is interesting and new, then this Vegan Broccoli Soup recipe is for you.

Ingredients
  • Broccoli florets and stem - 2-3 cup, chopped
  • Potato - 1 large, chopped
  • Onion - 1, chopped
  • Garlic - 2-3 cloves, chopped
  • Olive oil - 1 tbsp
  • Salt - as per taste
  • Black pepper powder - ½ tsp, as per taste
  • Vegetable Stock / Freshwater - 2-3 cup
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. I prefer to blanch my floral vegetables before using them in my recipe.
  2. You can skip this step.
  3. In a saucepan boil the water.
  4. When water is boiling, add salt and chopped broccoli.
  5. Boil for 2 minutes and turn of the flame.
  6. Strain them and keep them aside.
  7. In a pot or cooker, add olive oil.
  8. Add chopped garlic.
  9. Saute for a min.
  10. Add chopped onion.
  11. Saute for 2-3 minutes.
  12. Add chopped potato and blanched broccoli.
  13. Add salt and pepper.
  14. Add vegetable stock or freshwater.
  15. Cook for 15 - 20 minutes or until vegetables is completely cooked.
  16. Even you can pressure cook it for 2-3 whistles.
  17. Let it cool down.
  18. Once cooled down, make a puree in a food processor until rich creamy soup consistency.
  19. Or blend it using an electric blender and strain it using a soup strainer.
  20. Garnish it with your fav granola or chopped nuts and grated tofu.
  21. Serve hot with your fav meal.
