Oven Roasted Vegetables with Hung Curd Dip

Serves: 3 - 4
- Sweet potato - 2 medium
- Carrot - 2
- Beetroot - 1
- French beans - a handful
- A good quality oil - 2 tbsp ( olive oil / sesame oil )
- Salt - ¼ - ½ tsp, optional
- Black pepper powder - ¼ - ½ tsp, as per taste
- Thyme / Oregano / or seasoning of your choice - ½ tsp, as per taste, optional
- Homemade Hung curd / Greek Yogurt - ½ cup
- Chopped mint leaves - 2-3 tbsp
- Garlic - 2-3 cloves, minced, optional
- Lemon - ½ - 1 , juice
- Salt - as per taste
- Pepper powder - as per taste
- Soak sweet potato, beetroots, and carrot in water for some time.
- Scrub the skin and remove mud particles, if any.
- Again wash with fresh water.
- Dry them and remove any unwanted parts, ends, and pale skin parts using a knife.
- Cut them lengthwise and cut them into finger size pieces. Refer to a video recipe for more details.
- Place them separately on a plate.
- In a mixing bowl, add olive oil or sesame oil, or oil of your choice.
- Add salt, black pepper powder, and thyme/oregano/seasoning of your choice, as per taste.
- To enjoy the taste of vegetables, here I have added salt and seasonings in very little quantity.
- You increase or decrease them as per your preferences.
- In a bowl, add carrot, sweet potato, and french beans.
- Toss them nicely.
- Either line the baking tray using a parchment pepper/silicone mat or grease the baking tray with oil.
- Arrange them evenly on a tray.
- Now, in the same bowl, add beetroot and toss well.
- Arrange it at one side on the baking tray.
- Do not mix beetroot with other vegetables, or else it will leave its color.
- Meanwhile, preheat your oven ( both roads on ) to 200 degrees or 400 Fahrenheit for 10 min.
- Place the tray on the center rack and bake for 25 - 30 minutes or until tender.
- Baking time varies from oven to oven and the size of vegetables. Keep an eye after 20 min.
- To check, insert a fork and check cooked or not.
- Once done, remove the tray and place it on a wire rack.
- Serve warm with homemade hung curd dip or any other dip of your choice.
- To prepare a hung curd dip, strain water from fresh homemade curd or use greek yogurt.
- In a mixing bowl, add hung curd, mint leaves, juice of lemon, garlic, and seasoning as per taste.
- Give a nice mix.
- Adjust the taste. If it is too thick, add 1-2 tbsp of fresh curd ( without water) and give a mix.
- Cover it and let it rest for 15 - 20 min.
- Serve with oven roasted vegetables, healthy baked nachos, or roti crackers.
