Sprout Poha is a wholesome one-pot meal recipe. This Healthy Poha recipe is another version of the much-loved Kanda Poha recipe.

Ingredients
  • Poha / Flattened rice - 2 cups
  • Sprouts ( Moth / Moong / both ) - 1 cup
  • Vegetables of choice ( Carrot, peas, bell pepper, potato/ sweet potato/ boiled corn ) chopped / grated - 2 cups
  • Onion - 1 chopped, optional
  • Tomato - 1 chopped
  • Green chili - 2, chopped
  • Curry leaves - 1 spring
  • Lemon juice - 1 tbsp or more, as per taste
  • Coriander leaves - handful, chopped
  • Mustard seeds - ¼ tsp
  • Fennel seeds - 1 tsp
  • Roasted peanuts - a handful
  • Jaggery powder / Sugar - 1 tbsp or according to taste, optional
  • Hing - a pinch
  • Salt - as per taste
  • Turmeric powder - ½ tsp
  • Oil - 1 - 2 tbsp
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Place poha in a sieve and wash it properly under running water.
  2. Toss well to drain out all excess water. Keep it aside for 10 mins on a wired rack.
  3. Gently toss them and separate them from each other.
  4. Meanwhile, finely chop the onion, vegetables, and green chilies.
  5. Heat the oil in a pan.
  6. Fry the peanuts until done. Take them out into a bowl and keep them aside.
  7. In the same oil, add mustard seeds.
  8. When mustard seeds start to splutter, Add fennel seeds.
  9. Saute for 30 seconds and add hing, curry leaves, and chopped green chilies.
  10. Saute for a while and add onion.
  11. Saute until the onion turns transparent.
  12. Add vegetables that require some more cooking time.
  13. ( potato / sweet potato / cubed carrot / fresh peas )
  14. Sprinkle some salt.
  15. Mix well.
  16. Cover and cook for 3-4 minutes.
  17. Add the remaining vegetables.
  18. Add sprouts.
  19. Add salt and turmeric powder.
  20. Mix well. Cover and cook until vegetables turn soft.
  21. Stir in between. If vegetables are sticking at the bottom, sprinkle some water and cook.
  22. Add poha and Gently mix them.
  23. If poha looks dry, sprinkle 2-3 tbsp of water at this stage.
  24. Cover the pan and cook poha on slow flame for 5 - 7 min.
  25. Turn off the flame. Gently mix.
  26. Add jaggery powder, lemon juice, and coriander leaves.
  27. Give a nice mix.
  28. Lastly, add some chopped tomatoes and roasted peanuts.
  29. Here your Nutritious Sprout Poha is ready to serve.
Notes
You can garnish your Sprout Poha with onion, tomato, grated beetroot, fresh coconut, pomegranate, raw mango, and seeds of your choice.
For no onion, no garlic Sprout Poha recipe, skip the onion.
