Mint Potato Sandwich Pockets

Serves: 10-12 nos
- 20 - 24 bread slices
- Oil or butter for roasting sandwiches
- For Mint Potato Stuffing :
- 2 – 2 ½ cup potatoes ( peeled, boiled and mashed ) ( approx. 6 medium size potatoes )
- 4 - 5 tbsp mint ( fine chopped )
- ½ cup onion ( fine chopped ) ( 1 medium size onion )
- 2 – 3 green chilies ( fine chopped )
- 1 inch ginger ( grated )
- 2 – 2 ½ tsp black pepper corn ( freshly crushed )
- 1 ½ tsp roasted cumin powder
- ½ tsp garam masala
- ¼ tsp dry mango powder
- ¼ tsp chat masala
- ¼ tsp black salt
- 1 tsp lemon juice or according to taste
- ¼ cup coriander ( fine chopped )
- Salt according to taste ( approx 3 tsp )
- Wash the potatoes and boil with 1 tsp salt till 4 whistles.
- When potatoes get cool, peel them and mash them.
- Combine all the ingredients of stuffing in deep bowl. Mix well. Keep aside.
- Divide the stuffing into 10 – 12 equal portions.
- Take the bread slices. Spread butter. ( optional )
- Spread 1-2 tsp mint coriander chutney according to taste.
- Spread the stuffing on one slice. Cover with the other slice.
- Grease the sandwich maker with oil or butter.
- Toast the sandwich.
- Follow same steps for rest of the sandwiches.
- Serve warm with Mint Coriander chutney or tomato ketchup.
To make crispy sandwiches, sprinkle water on bread slices.Make a stack of the slices. Cover them with cloth and Keep is aside for 10-15 min.
