Cabbage Sambharo a traditional gujarati accompaniment is nothing but tempered cabbage salad. This cabbage sambharo is very common accompaniment which goes very well with dal, rice and sabji roti.

This is very simple yet tasty salad. This salad is prepared with minimal of ingredients and 2 minute recipe. The key point of this recipe is crunchiness of cabbage. In Guajarati homes when dal, rice and roti is prepared for meal, any variety of sambharo is the easiest replacement of sabji. In every Guajarati restaurant you will find one variety of sambharo in their Guajarati dish without fail.

You can also prepare the same recipe with carrot and raw papaya.

Step-by-Step Cabbage Sambharo Recipe :

Step 1 : Wash the cabbage properly. Thinly slice it and keep it aside.

Step 2 : Cut the chilies length wise or you can also chop them in small pieces.

Step 3 : Heat oil in to one non stick pan or kadai.

Step 4 : Add mustard seeds when oil is medium hot.

Step 5 : When mustard seeds start to splutter, add methi dana powder.

Step 6 : When methi dana powder will get brown and cook completely, add green chilies and curry leaves.

Step 7 : Saute them for a minute. Add sliced cabbage and salt.

Step 8 : Mix well. Cook cabbage for 2 – 3minutes only. Cabbage should remain crunchy. Do not overcook it because cabbage sambharo is type of salad not sabji.

Step 9 : Serve warm cabbage sambharo with gujarati dal and rice or sabji roti.

  • 3 cup thinly sliced cabbage
  • 6 – 7 green chili
  • 8 – 10 curry leaves ( optional )
  • ½ tsp fenugreek seeds powder ( methi dana powder )
  • 1 tsp mustard seeds ( sarson / rai )
  • Salt according to taste
  • 1 tbsp oil
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
