To prepare Aam Panna, take a flash of boiled raw mangoes, and blend it with mint leaves, sugar/jaggery, black salt, pepper powder, and roasted cumin powder. Raw Mango Salad :

This raw mango salad is an easy and quick yet healthy salad choice for summer meals. When the sun is shining brightly in the sky and to beat the heat, we relish this Kachi Keri Kachumber with our daily lunch. To make this salad, we need to chop raw mango, onion, and green chili finely. Season it with salt and jeera powder. Sprinkle some chopped coriander leaves or mint leaves if available. Mix well and enjoy !! You can add red chili powder in place of green chili. Nowadays, we have easy-to-use vegetable choppers. Roughly chop the mango and onion into big chunks. Gujarati Style Raw Mango Chutney :

Gujarati Raw mango chutney aka Khatti Meethi Kachi Keri ni Chutney recipe is a sweet, sour, hot, and no-cook Summer Special chutney recipe. This Raw Mango Chutney required minimal ingredients -must be available in every kitchen. Traditionally, mangoes were hand-pounded in a mortar-pestle with salt, chili powder, coriander powder, and jeera powder. Add jaggery according to the taste to balance the sourness of raw mangoes. Mango rice :

This Mango is simple, easy to cook, and seasonal rice preparation. This raw mango rice recipe has different regional names like – Kairi Bhat, Mamidikaya Pulihora, Mangai Sadam, etc. This tangy flavored rice recipe is almost similar to tempered rice, lemon rice, and coconut rice, and is a healthy meal option. To prepare tadka for Kairi Bhat or Mangai Sadam, heat oil in a pan, add mustard seeds, urad dal, chana dal, groundnuts, red chili, green chili, curry leaves, and saute. Add hing, turmeric, and grated raw mango. Saute everything until the mango turns soft. Lastly, add salt and gently fold this prepared mango mixture into cooked rice. Raw Mango Curry : 

This mango curry is known as “kachi Keri nu shak” or “kache aam ki sabji” in the regional language. It is a hot and tangy curry. It goes well with phulka, bhakhri, paratha, thalipeeth, the chilla, dosa, etc. It stays fresh for a couple of days if refrigerated well. To make this Raw Mango Curry – prepare the tempering, add chopped mangoes and stone if wish, add seasoning and water, and let it cook until mangoes are soft and cooked.
