Cupcake..!! Loved by everyone… no age bar…! I just love mawa badam flavored ice cream since my childhood. I gave Indian touch to cupcake by adding fresh mawa. Here we are presenting variation of cupcake – Mawa badam cupcake.

Ingredients
  • 120 gm all purpose flour ( maida )
  • 60 gm powder sugar
  • 20 gm almond ( coarsely grind )
  • 60 ml milk
  • 60 gm milk solid ( Khoya / Kova / Mawa )
  • 60 gm milk powder
  • 20 gm butter
  • ¼ tsp cardamom powder
  • ¼ tsp saffron
  • ¼ tsp baking powder
  • ¼ tsp cooking soda
  • 6-7 almonds for garnishing.
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Measure all ingredients.
  2. Soak saffron in milk.
  3. Strain flour, baking powder and soda.
  4. Beat butter and sugar for 3-4 minutes.
  5. Add milk and milk solids. Gently fold it.
  6. Add milk powder, flour mixture, cardamom powder and crushed almond. Gently fold it.
  7. Don’t over mix.
  8. Pour equal quantity of the batter into 6 greased and dusted ( or use cupcake liner ) 68 mm. (2½”) diameter aluminum molds. ( approx 65 gm in one portion ) .
  9. Garnish with almonds.
  10. Bake in a pre-heated oven at 180 degree celsius for 10 -15 minutes. Insert a toothpick or knife in the cupcake. If it comes out clean your cupcake is ready.
  11. Allow it to cool completely and serve.
