Mint potato sandwich is made with mint coriander chutney mixed with the mashed potatoes which you can enjoy as breakfast/dinner.

Ingredients
  • 20 - 24 bread slices
  • Oil or butter for roasting sandwiches
  • Mint Coriander chutney

    For Mint Potato Stuffing :
  • 2 – 2 ½ cup potatoes ( peeled, boiled and mashed ) ( approx. 6 medium size potatoes )
  • 4 - 5 tbsp mint ( fine chopped )
  • ½ cup onion ( fine chopped ) ( 1 medium size onion )
  • 2 – 3 green chilies ( fine chopped )
  • 1 inch ginger ( grated )
  • 2 – 2 ½ tsp black pepper corn ( freshly crushed )
  • 1 ½ tsp roasted cumin powder
  • ½ tsp garam masala
  • ¼ tsp dry mango powder
  • ¼ tsp chat masala
  • ¼ tsp black salt
  • 1 tsp lemon juice or according to taste
  • ¼ cup coriander ( fine chopped )
  • Salt according to taste ( approx 3 tsp )
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Wash the potatoes and boil with 1 tsp salt till 4 whistles.
  2. When potatoes get cool, peel them and mash them.
  3. Combine all the ingredients of stuffing in deep bowl. Mix well. Keep aside.
  4. Divide the stuffing into 10 – 12 equal portions.
  5. Take the bread slices. Spread butter. ( optional )
  6. Spread 1-2 tsp mint coriander chutney according to taste.
  7. Spread the stuffing on one slice. Cover with the other slice.
  8. Grease the sandwich maker with oil or butter.
  9. Toast the sandwich.
  10. Follow same steps for rest of the sandwiches.
  11. Serve warm with Mint Coriander chutney or tomato ketchup.
Notes
To make crispy sandwiches, sprinkle water on bread slices.Make a stack of the slices. Cover them with cloth and Keep is aside for 10-15 min.
