Paneer fried rice is a delicious variation of routine Chinese fried rice. Paneer fried rice is an Indian variation of Chinese fried rice. In Paneer fried rice paneer cubes are added and sautéed along with other spices and veggies. The secret of making restaurant like paneer fried rice at home lies in using moisture free cooked rice because moisture in freshly made steamed rice will cause it to steam instead of fry. Hence, it is important to use either leftover or pre-cooked rice in this recipe. Paneer fried can often pack for kids lunch box.

Step wise Recipe :

Step 1 : Wash rice and soak for 15-20 min.

Step 2 : Boil the rice with 2 cup water. While boil add 1 tsp salt and 1 tsp oil.

Step 3 : Keep it aside to cool completely.

Step 4 : Make a garlic-ginger paste in mortar-pastle.

Step 5 : Crush the black pepper corns in mortar-pastle.

Step 6 : In a non stick pan. Heat 1 tsp oil. Add paneer cubes.

Step 7 : Roast paneer cubes till they turns into golden brown color.

Step 8 : Heat 2 tbsp oil in the same pan.

Step 9 : Add chopped onions. Saute till they get transparent.

Step 10 : Add ginger-garlic paste. Saute for a while.

Step 11 : Add all veggies. Mix well. Add salt.

Step 12 : Once vegetables get half cooked add all sauces, vinegar and pepper. Don’t overcook the veggies. Mix well.

Step 13 : Add cooled boiled rice. Gently mix well. Cover the lid and keep on simmer for 10 min.

Step 14 : Add roasted paneer cubes, mix well and serve paneer fried rice hot.

Ingredients
  • 200 gm paneer ( chopped in cubes )
  • 8-10 garlic cloves ( approx. 1 tsp garlic paste )
  • 1 inch ginger (approx. 1 tsp garlic paste )
  • 1 cup onion ( fine chopped )
  • ½ cup cabbage ( fine chopped )
  • ¼ cup carrot ( fine chopped and par boiled )
  • ¼ cup french beans ( fine chopped and par boiled )
  • 1 tbsp black pepper corns
  • Salt according to taste ( approx. 2 tsp )
  • 3 tbsp red chili sauce ( according to taste )
  • 2 tsp soya sauce
  • 1 tbsp tomato ketchup
  • ½ tsp vinegar
  • 3 tbsp oil
  • For Boiling
  • 1 cup rice
  • 2 cup water
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
