Monsoon time is the best time to eat fritters made with any vegetable. You can make them anytime, especially when you have unplanned guests visiting your house. Spinach fritters or palak pakoda can be served with your favourite chutney, it tastes awesome with Tomato Ketchup, Tamarind chutney or green coriander chutney (or all three). Happy Monsoon..!!

Step wise Recipe :
Step 1 : Combine all ingredients of batter in pan and make a thick smooth batter.Spinach_Fritters_1
Step 2 : Wash spinach leaves. Gently pet them using cotton cloth.

Step 3 : Heat oil till medium hot in a pan or kadai for frying.
Step 4 : Dip each spinach leaf into the batter and coat it evenly. Place the batter coated leaf gently in the hot oil.

Step 5 :   You can add more spinach leaves according quantity of oil and size of kadai.
Step 6 : Fry the spinach fritters – palak pakora till golden and crisp.
Step 7 : Drain spinach fritters – palak pakora on paper towels to remove excess oil.
Step 8 : Sprinkle chat masala on spinach fritters – palak pakora. ( optional )
Step 9 : Serve the spinach fritters – palak pakora hot with green chutney, tamarind chutney or homemade tomato sauce.

Ingredients
  • 18-20 spinach leaves
  • Oil for frying


    For Batter
  • 2 cup besan / gram flour
  • 2 tsp red chili powder
  • 2 tsp coriander powder
  • ¼ tsp carom seeds / ajwain
  • 2 tsp while sesame seeds / til
  • Pinch of turmeric
  • Pinch of asafetida
  • Pinch of cooking soda
  • 1 tsp lemon juice
  • Salt according to taste ( approx. 1 tsp )
  • ¾ cup water or according to need
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
