Today Lauki Aloo ki Sabji or Bottle Gourd & Potatoes Curry Indian Style is my addition to the dinner table. Its a quick, easy, simple yet very tasty sabji.Lauki (bottle gourd) has a lot of health benefits as it is rich in vitamins, fiber and minerals which helps for better digestion. Lauki ka ras or bottle gourd juice or even slush helps in weight loss. It is also known to reduce liver and kidney inflammation.Today this lauki aloo ki sabji is also nice to have in lunch or to carry for tiffin along with regular roti. Lauki Aloo ki Sabji tastes just awesome.

Here we are presenting the step by step recipe of lauki aloo ki sabji.

Step 1 : Wash the lauki or dudhi and potatoes. Peel them. Chop them into small cubes. Keep it aside.

Step 2 : Fine chop the tomatoes and keep it aside.

Step 3 : Fine chop the green chilies and keep it aside. Make a paste of garlic in mortar pastel.

Step 4 : Heat oil in a pressure cooker or pot.

Step 5 : Add mustard seeds.

Step 6 : When mustard seeds splutter, add cumin seeds.

Step 7 : When cumin seeds crackle, add hing , green chilies and curry leaves.

Step 8 : Saute them for half of the minute. Add garlic paste.

Step 9 : Saute garlic till raw aroma of garlic goes away. Add fine chopped tomatoes.

Step 10 : Cook for 1 – 2 minutes. Add chopped potatoes and lauki.

Step 11 : Add all dry masala. Mix well.

Step 12 : Cover the cooker or pot with plate or lid.

Step 13 : Cook on slow flame till oil separates from sides.

Step 14 : Add water according to need. Mix well. Close the cooker and cook till 4 whistles. Keep on simmer for 3 – 4 minutes.

Step 15 : Allow it to cool down completely. Add chopped coriander leaves. Gently mix the lauki aloo ki sabji.

Step 16 : Serve hot lauki aloo ki sabji with roti or plain paratha.

Note : While adding water for cooking, please keep in mind that lauki release enough amount of water from it. Another thing we have added tomatoes as well. So don’t add too much water otherwise you to cook till water gets evaporate and your lauki aloo ki sabji will taste not good.

You can also prepare this lauki aloo ki sabji in pot or pan. Its also tatse good. Pressure cooker method is quick and easy.

Before adding water, cooking of lauki in oil is the golden secret of this recipe. This tip is from my grand mother’s treasure !!!

Ingredients
  • 250 gm lauki ( bottle ground or dudhi )
  • 125 gm potatoes ( 1 large )
  • 1 med size tomato
  • 1 – 2 green chili
  • 8 – 10 curry leaves
  • 6 – 7 garlic cloves
  • 1 ½ tbsp oil
  • ½ tsp mustard seeds ( sarson / rai )
  • ½ tsp cumin seeds ( jeera )
  • Pinch of asafetida ( hing )
  • ¼ tsp turmeric powder ( haldi )
  • 1 tsp red chili powder ( lal mirchi powder )
  • 1 tsp coriander powder ( dhaniya powder )
  • ¼ tsp garam masala
  • ¼ - ½ cup water according to need
  • Salt according to taste ( approx. 1 tsp )
  • Fine chop coriander leaves
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
