Variyali sharbat or saunf sharbat is a healthy fennel seed drink to beat the summer heat. Variyali and saunf are the common names of fennel seeds, it is a popular summer beverage of Gujarat. Summer is on its peak and the mercury has already reached maximum in many parts of India. The afternoons are specially hot and one needs to be extra cautious while going out in sun during afternoon. Fennel seeds are good for digestion and are cooling to the body according to Ayurveda. The seeds are usually used as a mouth freshner. Usually rock sugar (mishri) is used to sweeten the drink. You can use jaggery, sugar or honey if do not have rock sugar on hand.

Ingredients
  • 2 cup chilled water
  • 1 tsp fennel seeds ( powdered )
  • 3 tbsp rock sugar ( mishri ) ( powdered )
  • ½ cup ice cubes
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Mix fennel seeds and rock sugar in chilled water.
  2. Strain it.
  3. Add ice cubes.
  4. Serve chilled.
Notes
For perfect and delicious variyali sharbat, soak the variyali overnight or at least 2-3 hours.
