I have used green tomatoes in this recipe. Green tomatoes are tangy in taste and it taste even better when cooked with green chili and garlic tadka. I have added jaggery to give sweeter taste to green tomato sabji.

Tomatoes don’t take much time to get cooked. That’s why this recipe is the easy and quick sabji recipe. Just add it into your meal whenever you are running sort of time. Green tomato sabji is a tangy and sweet tasting dish, so kids will love it too. Enjoy this hare tamatar ki sabji with roti or paratha. You don’t require any side dishes while having it. Step-by-Step Green Tomato Sabji ( Hare Tamatar ki Sabji ) Recipe :

Step 1 : Fine chop the green tomatoes into small size cubes.

Step 2 : Fine chop the green chilies and garlic. Keep it aside.

Step 3 : Heat the oil in non stick pan or kadai.

Step 4 : Add cumin seeds when oil is medium hot.

Step 5 : When cumin seeds start to crackle, Add curry leaves, chopped green chilies and garlic.

Step 6 : Saute till raw aroma goes away, Do not burn garlic. Add hing and turmeric powder.

Step 7 : Mix well. Immediately add chopped tomatoes.

Step 8 : Mix well. Add red chili powder, coriander powder, garam masala and salt.

Step 9 : Cook till tomatoes turn soft. Add Jaggery. Mix well.

Ingredients
  • 500 gm raw or green tomato ( approx. 2 cup chopped tomatoes )
  • 4 – 5 curry leaves
  • 1 – 2 green chilies ( fine chopped )
  • 5 – 6 garlic cloves ( fine chopped )
  • 1 tbsp oil
  • ½ tsp cumin seeds
  • Pinch of asafetida
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • Pinch of garam masala
  • ¼ cup chopped jaggery or according to taste or sugar
  • Salt according to taste ( approx. ½ - 1 tsp )
  • ¼ cup freshly chopped coriander leaves
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
