Summers are the best time of the year if you love Mangoes. But at the same time, we do not like to have heavy meals. So this Mango Salad Recipe is the perfect dish for light meals. You can pair it with one or two slices of sourdough bread and make it a completely healthy meal. 

This Mango Salad recipe is easy and versatile. I tried to add all summer produce to make it a more digestive and seasonal recipe like onion, cucumber, coriander leaves, and mint leaves. I added capsicum or bell pepper to give a nice crunch. You can add more vegetables of your choice. 

To enhance its nutritional profile, try to add easily digestible boiled pulses or millets or the available pulses, roasted nuts, and seeds. In this Mango Bean Salad recipe, I have added red cowpea beans, peanuts, pumpkin seeds, and flax seeds. You can add all your favorite or available beans and nuts. You can replace the cooked pulses with some crumbled paneer or tofu. 

The interesting part of this salad recipe is its salad dressing. It is the game-changer that made the salad more juicy and flavorful. This Mango Salad recipe is a delicious combination of sweet, sour, and hot tastes. You can add vinegar of your choice or the same quantity of lemon juice in place of apple cider vinegar. You can even add more fresh herbs and spices to give a nice twist.

Ingredients
  • Ripe mangoes - 1 - 1 ½ cups, cubes
  • Bell pepper of your choice / Capsicum - ½ cup, chopped
  • Onion - 1 no, thinly sliced
  • Cucumber - ½ cup, sliced
  • Cowpea Beans / Pulses or Millet of your choice - ½ cup or more, cooked
  • Coriander leaves - ¼ cup, chopped
  • Mint leaves - ¼ cup, chopped
  • Roasted Peanuts - 2 tbsp or more
  • Roasted pumpkin seeds - 1 tbsp
  • Roasted flax seeds - 1 tsp
  • Lemon juice - 1-2 tbsp
  • Olive oil / Sesame oil - 1 tbsp
  • Apple cider vinegar - ½ - 1 tbsp
  • Pink Salt - ½ tsp
  • Paprika powder / Red chili flakes - ½ tsp or more, as per taste
  • Black pepper powder - ¼ tsp or more, as per taste
  • Roasted cumin powder - 1 tsp
  • Jaggery powder / honey - 1 tsp, optional
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Soak the mangos in water for some time. Soaking will help to reduce the heat of mangoes.
  2. Boil the pulses of your choice or use a tinned pack of them. Drain the water and keep it aside.
  3. Chop all the vegetables and mangoes and keep them aside.
  4. Add chopped mangoes, vegetables, coriander leaves, mint leaves, boiled cowpea beans, roasted peanuts, pumpkin seeds, and flax seeds into the large mixing bowl.
  5. To prepare the salad dressing, take another bowl.
  6. Add olive oil, lemon juice, apple cider vinegar, salt, pepper powder, cumin powder, and jaggery powder.
  7. Give a nice whisk.
  8. Add the salad dressing to the salad bowl.
  9. Gently toss the salad.
  10. Make sure the salad dressing is incorporated well.
  11. Garnish with some fresh mint leaves and serve fresh.
